Cut shallow slits and poke holes all over the pork chops to help them absorb the marinade. Marinate overnight in the refrigerator.
1 lb pork chops, 2 Tbsp corn starch, 2 tsp five spice powder, ½ Tbsp soy sauce, 2 tsp sugar, ½ Tbsp Chinese cooking wine, 1 tsp pepper
Heat oil in a large wok or skillet over high heat. Add the scallion whites and fry for about 30 seconds, until fragrant.

Reduce heat to medium and add the eggs. Scramble gently for about 1 minute, cooking the eggs until mostly set but still slightly soft.

Add the rice and increase heat to high. Cook for a few minutes, stirring and breaking up the rice so it’s evenly mixed with the eggs and scallions.
1.5 cups white rice
Add the seasonings and continue cooking for a few more minutes, stirring constantly. Stir in the green parts of the scallions and cook for 1 more minute. Transfer the fried rice to a plate and set aside.

Heat oil in a separate pan over medium heat.
Add the pork chops and fry for 4–5 minutes per side, until golden brown and cooked through. To check doneness, cut into one pork chop to ensure there’s no pink inside. Alternatively, air fry at 375°F for about 15 minutes, flipping halfway through.
Serve the pork chops over the fried rice. Drizzle with chili oil, if desired, for extra flavor.
