Peel the orange and lemon, removing as much of the bitter white pith as possible.
In a blender, combine the peeled orange, lemon, dates, and ½ cup water. Blend until completely smooth.

Transfer the mixture to a saucepan over medium heat. Stir in the orange mixture, citrus peel bits, cinnamon stick, ground cinnamon, and honey.
⅓ cup orange peels, ¼ lemon peel, 1 cinnamon stick, ¼ tsp cinnamon, 2 Tbsp honey
Bring to a gentle simmer, then reduce heat to low. Cook for 30–35 minutes, stirring occasionally, until the mixture thickens and deepens in sweetness.
Remove and discard the cinnamon stick.
Allow the puree to cool completely before transferring to an airtight container. Store in the refrigerator.
