Heat 1 tsp of oil in a pot over medium heat. Sauté the white part of green onions, garlic, ginger, and onion for about 1-2 minutes until fragrant.

Add in the beef bone broth, water, and anchovy broth packet, followed by the radish. Bring it to a boil, reduce heat to a simmer, cover, and allow it to cook for 3-4 minutes.

Add the zucchini, chili pepper, mushrooms, and tofu. Increase heat to a boil, reduce to a simmer, then cover again to continue cooking for 4-5 minutes until the vegetables are tender.

Lower the heat and discard the anchovy packet if it was used.
Stir in the red pepper flakes, turmeric, black pepper, and fish sauce.

Let the stew cool for about 5 minutes, then add the red pepper paste and fermented soybean paste. Stir until fully dissolved and combined.

Garnish with green onions and serve warm with a side of kimchi.
