Soybean Paste Stew

This fermented soybean paste stew is inspired by the Korean soup, doenjang jjigae. It can be made in less than 30 minutes with tofu, vegetables, and probiotic-rich soybean paste for gut and immune support.

Ingredients
  

  • 2 green onion stalks, chopped
  • 1 Tbsp garlic, minced
  • 4 ginger slices
  • ½ cup onion, chopped
  • 1 cup beef bone broth
  • ¼ cup water
  • 1 anchovy broth packet or 1 tsp dashi powder
  • ¾ cup radish, cut into cubes
  • 1 cup zucchini, sliced and halved
  • cup green chili pepper, sliced
  • cup shiitake mushrooms, sliced
  • 5 oz medium firm tofu, cut into cubes
  • 1 tsp red pepper flakes, gochugaru
  • tsp turmeric
  • ½ tsp black pepper
  • 1 tsp fish sauce
  • 1 tsp red pepper paste, gochujang
  • 1 Tbsp soybean paste

Garnish

  • Green onions, chopped
  • Sesame seeds

Instructions
 Start Cooking 

  • Heat 1 tsp of oil in a pot over medium heat. Sauté the white part of green onions, garlic, ginger, and onion for about 1-2 minutes until fragrant.

  • Add in the beef bone broth, water, and anchovy broth packet, followed by the radish. Bring it to a boil, reduce heat to a simmer, cover, and allow it to cook for 3-4 minutes.

  • Add the zucchini, chili pepper, mushrooms, and tofu. Increase heat to a boil, reduce to a simmer, then cover again to continue cooking for 4-5 minutes until the vegetables are tender.

  • Lower the heat and discard the anchovy packet if it was used.
  • Stir in the red pepper flakes, turmeric, black pepper, and fish sauce.

  • Let the stew cool for about 5 minutes, then add the red pepper paste and fermented soybean paste. Stir until fully dissolved and combined.

  • Garnish with green onions and serve warm with a side of kimchi.
