Heat a medium skillet over medium heat. Sauté the garlic and onions for 1 minute, then add the beef and season with salt and pepper.

Cook the beef for 3–4 minutes, until it is almost fully cooked, then remove it from the pan and set aside.

In a food processor, grind the tomatoes and bell peppers together until they form a chunky purée.

In the same skillet, sauté the shallots and garlic for 1–2 minutes over medium heat until fragrant.

Pour in the tomato–bell pepper mixture and cook for about 2 minutes, allowing the sauce to slightly thicken.
Add the soy sauce, fish sauce, sugar, tomato paste, and oyster sauce. Stir well and cook for another 2 minutes.

Return the beef to the skillet, then add the eggs and sliced Vietnamese pork sausage. Cover the skillet and cook until the eggs are done to your preference.

Toast the baguette while the eggs cook.

Season the skillet with additional salt and pepper if needed. Garnish with cilantro and green onions, and serve hot with the toasted baguette.
