Ingredients

  • 1.25 cups oats
  • ¼ cup walnuts, crushed
  • ¼ cup pecans, crushed
  • 2 Tbsp almonds, sliced
  • 2 Tbsp pumpkin seeds
  • 2 Tbsp raisins
  • 2 Tbsp cranberries
  • 2 Tbsp unsweetened coconut flakes
  • ¼ tsp cinnamon
  • tsp salt
  • 1 Tbsp coconut oil
  • cup date syrup, or choice of sweetener (can be ¼ cup honey or agave)

Instructions
 Start Cooking

  • Line the air fryer basket with parchment paper. Spread the granola mixture in an even layer, making sure it is not too tightly packed.
  • Air fry at 320°F for 5 minutes. Remove the basket and stir the granola to ensure even browning.
  • Return to the air fryer and cook for another 5 minutes at 320°F. Remove and stir again.
  • Increase the temperature to 350°F and air fry for 5 more minutes, or until golden and fragrant. Watch closely to prevent burning.
  • Remove from the air fryer and let cool completely (about 10–15 minutes). The granola will continue to crisp as it cools.

Notes

Let the granola cool completely before storing in an airtight container at room temp. It can be kept at room temp for 1-2 weeks, or longer in the fridge! Just check on how good it is by smelling!

To make large clusters, then do not stir as aggressively!
