Avocado fritters are pan-seared patties made with mashed avocado and served with a yogurt sriracha dipping sauce. It’s an easy avocado appetizer that’s full of healthy fats, high in protein, and works perfect as a snack or appetizer.
In a large mixing bowl, combine all the fritter ingredients and mix until everything is well incorporated into a batter.
2 medium ripe avocados, 1 cup zucchini, 1 cup carrots, ½ cup green onions, ⅔ cup all-purpose flour, 2 large eggs, 1 Tbsp garlic, 2 tsp black pepper, 1 tsp salt
Heat oil in a large skillet over medium-high heat.
1 Tbsp extra virgin olive oil
Scoop about ¼ cup of batter and drop it onto the pan, forming patties about 3 inches in diameter.
Cook each fritter for 1–2 minutes per side until lightly golden.
Remove from the skillet and set aside to cool slightly for a few minutes.
In a small bowl, mix together all the dipping sauce ingredients until well combined.
⅓ cup plain Greek yogurt, 1 Tbsp Sriracha chili sauce, 1 tsp minced garlic
Serve the avocado fritters warm with the dipping sauce and your choice of toppings.
