Avocado Fritters

Avocado fritters are pan-seared patties made with mashed avocado and served with a yogurt sriracha dipping sauce. It’s an easy avocado appetizer that’s full of healthy fats, high in protein, and works perfect as a snack or appetizer.

Ingredients
  

  • 2 medium ripe avocados, peeled and mashed
  • 1 cup zucchini, shredded
  • 1 cup carrots, shredded
  • ½ cup green onions, chopped
  • cup all-purpose flour
  • 2 large eggs
  • 1 Tbsp garlic, minced
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 Tbsp extra virgin olive oil

Sauce

  • cup plain Greek yogurt
  • 1 Tbsp Sriracha chili sauce, adjusted to spice preference
  • 1 tsp minced garlic

Instructions
 Start Cooking 

  • In a large mixing bowl, combine all the fritter ingredients and mix until everything is well incorporated into a batter.
    2 medium ripe avocados, 1 cup zucchini, 1 cup carrots, ½ cup green onions, ⅔ cup all-purpose flour, 2 large eggs, 1 Tbsp garlic, 2 tsp black pepper, 1 tsp salt
  • Heat oil in a large skillet over medium-high heat.
    1 Tbsp extra virgin olive oil
  • Scoop about ¼ cup of batter and drop it onto the pan, forming patties about 3 inches in diameter.
  • Cook each fritter for 1–2 minutes per side until lightly golden.
  • Remove from the skillet and set aside to cool slightly for a few minutes.
  • In a small bowl, mix together all the dipping sauce ingredients until well combined.
    ⅓ cup plain Greek yogurt, 1 Tbsp Sriracha chili sauce, 1 tsp minced garlic
  • Serve the avocado fritters warm with the dipping sauce and your choice of toppings.

Notes

I chose to turn these into salmon lox avocado fritters! Tasted amazing!
