Avocado Fritters
These Avocado Fritters are slightly crispy on the outside and softer on the inside, making them a quick and satisfying snack or appetizer. The mashed avocado makes this rich in healthy fats, and high in protein from egg and the side of yogurt sriracha dipping sauce.


Comes together in minutes and works great as a snack, appetizer, or substitute to your typical avocado toast!

Avocado Fritters
Ingredients
- 2 medium ripe avocados, peeled and mashed
- 1 cup zucchini, shredded
- 1 cup carrots, shredded
- ½ cup green onions, chopped
- ⅔ cup all-purpose flour
- 2 large eggs
- 1 Tbsp garlic, minced
- 2 tsp black pepper
- 1 tsp salt
- 1 Tbsp extra virgin olive oil
Sauce
- ⅓ cup plain Greek yogurt
- 1 Tbsp Sriracha chili sauce, adjusted to spice preference
- 1 tsp minced garlic
Instructions Start Cooking
- In a large mixing bowl, combine all the fritter ingredients and mix until everything is well incorporated into a batter.2 medium ripe avocados, 1 cup zucchini, 1 cup carrots, ½ cup green onions, ⅔ cup all-purpose flour, 2 large eggs, 1 Tbsp garlic, 2 tsp black pepper, 1 tsp salt

- Heat oil in a large skillet over medium-high heat.1 Tbsp extra virgin olive oil
- Scoop about ¼ cup of batter and drop it onto the pan, forming patties about 3 inches in diameter.

- Cook each fritter for 1–2 minutes per side until lightly golden.
- Remove from the skillet and set aside to cool slightly for a few minutes.
- In a small bowl, mix together all the dipping sauce ingredients until well combined.⅓ cup plain Greek yogurt, 1 Tbsp Sriracha chili sauce, 1 tsp minced garlic

- Serve the avocado fritters warm with the dipping sauce and your choice of toppings.
