Black Sesame Sweet Potato Banana Bread

Black sesame sweet potato banana bread is naturally sweet and high in fiber. It’s a nourishing twist on classic banana bread.

Ingredients
  

  • 1 cup blended oats
  • ¼ cup flaxseed mix
  • 2 tsp cinnamon
  • ½ Tbsp baking powder
  • ½ tsp salt
  • 1.5 cups roasted sweet potato, mashed
  • 1 banana, mashed
  • ½ cup black sesame butter
  • 2 eggs
  • 1 Tbsp avocado oil
  • 2 Tbsp maple syrup

Black sesame layer

  • ¼ cup walnuts
  • ¼ cup black sesame seeds
  • ¼ cup cooked purple rice
  • ½ cup hot water

Garnish

  • Crushed walnuts
  • Banana slices
  • Roasted white sesame seeds

Instructions
 Start Cooking 

  • Preheat the oven to 350°F.
  • In a medium mixing bowl, whisk together all the dry ingredients until evenly combined.

  • In a large mixing bowl, mash the roasted sweet potato and banana until mostly smooth. Stir in the remaining wet ingredients until well incorporated.
    1.5 cups roasted sweet potato, 1 banana, ½ cup black sesame butter, 2 eggs, 1 Tbsp avocado oil, 2 Tbsp maple syrup
  • Add the dry ingredients to the wet mixture and stir until fully combined.
  • To make the black sesame topping, blend all topping ingredients until slightly chunky. Add a small amount of water if needed to reach a spreadable consistency.
    ¼ cup walnuts, ¼ cup black sesame seeds, ¼ cup cooked purple rice, ½ cup hot water
  • Line a 9”x5” loaf pan with parchment paper. Pour the batter into the pan and smooth the top. Spread the black sesame mixture evenly over the batter, then add any desired garnishes.

  • Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool for 15–30 minutes before slicing and serving.

Notes

I like to slice and freeze these to enjoy them whenever I want!
