Steam the broccoli for 4-5 minutes until tender.
1 cup broccoli florets
In a pan, heat extra virgin olive oil over medium heat then sautee the onion, garlic, and ginger for 2 mins until fragrant.
½ Tbsp extra virgin olive oil, ¼ cup onion, 1 Tbsp garlic, 3 slices ginger
Transfer everything to a blender and blend until smooth and creamy.
1 cup spinach, ¼ cup green onion, 300 mL beef bone broth, 4 oz soft tofu, 70 mL coconut milk, 1 tsp miso paste, 1 tsp soy sauce, ¼ tsp salt, ½ tsp pepper, ¼ tsp paprika
Pour into a bowl, garnish if desired, and serve warm.
