Gazpacho

Gazpacho is a Spanish cold tomato soup made by blending fresh vegetables into a refreshing dish. This soup is light, flavorful, and perfect for warm weather meals.

Ingredients
  

  • 2 roma tomatoes, chopped
  • 1 cup cherry tomatoes
  • 2 persian cucumbers, chopped
  • ½ green chili, adjust to spice level
  • ½ green bell pepper, chopped
  • ½ red bell pepper, chopped
  • ¼ cup red onion, chopped
  • 4 garlic cloves
  • cup cilantro
  • ¼ cup sherry vinegar
  • 3 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 Start Cooking 

  • Add all the gazpacho ingredients to a blender or food processor. Blend until the mixture becomes smooth and fully combined.
    2 roma tomatoes, 1 cup cherry tomatoes, 2 persian cucumbers, ½ green chili, ½ green bell pepper, ½ red bell pepper, ¼ cup red onion, 4 garlic cloves, ⅓ cup cilantro, ¼ cup sherry vinegar, 3 Tbsp extra virgin olive oil, 1 tsp salt, 1 tsp black pepper
  • Taste and adjust seasoning if needed.
  • Garnish with your desired toppings and serve cold.
