Gazpacho
This Gazpacho is a refreshing cold soup that I first tried when I visited Spain, and it instantly became one of my favorite warm-weather dishes! I visited in the summer, when it was super hot so this was my savior during meals! The bright tomato-bell pepper base makes it perfect for hot days when you want something cooling but still nourishing. It really highlights how delicious fresh ingredients can be!



Gazpacho
Ingredients
- 2 roma tomatoes, chopped
- 1 cup cherry tomatoes
- 2 persian cucumbers, chopped
- ยฝ green chili, adjust to spice level
- ยฝ green bell pepper, chopped
- ยฝ red bell pepper, chopped
- ยผ cup red onion, chopped
- 4 garlic cloves
- โ cup cilantro
- ยผ cup sherry vinegar
- 3 Tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp black pepper
Instructions Start Cooking
- Add all the gazpacho ingredients to a blender or food processor. - Taste and adjust seasoning if needed.
- Garnish with your desired toppings and serve cold.
