Sweet Potato Red Bean Mochi Balls (Air Fryer)

 Sweet potato red bean mochi balls are chewy air fryer mochi made with Okinawan sweet potatoes, tapioca starch, and sweet red bean filling. These naturally colorful mochi balls are rich in antioxidants, easy to make, and packed with nutrients.

Ingredients
  

  • 2 cups steamed purple Okinawan, Hawaiian potatoes, mashed
  • ¾ cup tapioca starch
  • 50 mL coconut milk
  • ½ Tbsp baking powder
  • 1 tsp salt
  • ½ cup sweetened red bean, yude azuki

Instructions
 Start Cooking 

  • Peel and chop the sweet potatoes, then steam them for about 20 minutes or until fully soft.
    2 cups steamed purple Okinawan
  • Transfer the potatoes to a large mixing bowl and let them cool for about 5 minutes.
  • Mash the sweet potatoes until smooth.
  • Add the tapioca starch, coconut milk, baking powder, and salt, then mix thoroughly with the mashed potatoes until combined.
    ¾ cup tapioca starch, 50 mL coconut milk, ½ Tbsp baking powder, 1 tsp salt
  • On a flat surface, knead the mixture for about 2 minutes until it forms a smooth dough.
  • To shape the mochi balls, take about 2 tablespoons of the dough, place 1 teaspoon of red bean filling in the center, then roll it into a ball.

  • Place the balls in the air fryer and cook at 360°F for 15 minutes, or until cooked through.
  • Allow the mochi balls to cool for 5–10 minutes before serving so they firm up slightly.
