Peel and chop the sweet potatoes, then steam them for about 20 minutes or until fully soft.

Transfer the potatoes to a large mixing bowl and let them cool for about 5 minutes.
Mash the sweet potatoes until smooth.
Add the tapioca starch, coconut milk, baking powder, and salt, then mix thoroughly with the mashed potatoes until combined.

On a flat surface, knead the mixture for about 2 minutes until it forms a smooth dough.
To shape the mochi balls, take about 2 tablespoons of the dough, place 1 teaspoon of red bean filling in the center, then roll it into a ball.

Place the balls in the air fryer and cook at 360°F for 15 minutes, or until cooked through.
Allow the mochi balls to cool for 5–10 minutes before serving so they firm up slightly.
