This tofu over minced pork is a high-protein meal made by boiling tofu in salted water to improve its texture, season it from within, and help reduce its beany flavor.
Bring a pot of salted water to a boil (about 1 Tbsp of salt). Add the firm tofu and cook for 10 minutes. Drain, then coat the tofu with the marinade sauce and set aside while you prepare the pork.
Heat a large skillet over medium heat. Sauté the garlic, shallots, and lemongrass for 1 minute, or until fragrant.
Stir in the tomato paste and carrots, cooking for another 2 minutes.
Add the tomatoes and cook for 2 minutes, allowing them to soften and release their juices.
Add the ground pork and cook for about 3 minutes, breaking it up as it browns.
Stir in the seasonings and continue cooking for another 3 minutes to allow the flavors to combine.
Add the Thai chilis, green beans, and chicken bone broth. Bring the mixture to a gentle simmer, cover, and cook for about 4 minutes, or until the green beans are tender and the pork is fully cooked.
Plate the pork mixture then place serve with tofu on top and a side of rice.
