Season the beef evenly with salt and pepper. Heat butter in a large pan over medium heat. Add the beef and cook until about halfway done, 1–2 minutes per side. Transfer to a plate and set aside then cut into bite-sized pieces.

Using the same pan, add the garlic and sauté for about 30-60 seconds, until fragrant and slightly tan.

Add the green onions and cook for 30 seconds, stirring occasionally.

Add in the oyster sauce, soy sauce, and fish sauce. Cook for 30-60 seconds, allowing the sauce to heat through.

Return the beef to the pan and cook for 2 minutes, until just cooked through. Add the noodles and toss everything together for about 2 minutes, until the noodles are evenly coated and heated through.
