In a small bowl, mix the tamarind pulp with ½ cup hot water, stirring until dissolved.

Heat oil in a large pot over medium heat. Add the garlic and sauté for about 1 minute, until fragrant.

Pour in remaining 1½ cups water and increase heat to bring the water to a boil.

Stir in the tamarind mixture and season with fish sauce, chicken powder, and salt to taste.

Add the pineapple and reduce heat to low. Cover and simmer for 5 minutes to allow the flavors to develop.

Add the tomato wedges and okra and cook for 2 minutes over medium heat.

Lower the heat to a gentle simmer. Add the tofu and shrimp, cover, and cook for 3–4 minutes, until the shrimp cook fully

Uncover and stir in the bean sprouts and chopped herbs. Cook for no more than 2 minutes, just until slightly softened.
