Vietnamese Broken Rice (Cơm Tấm)

How to make Vietnamese broken rice, or Cơm Tấm! This is one of my favorite dishes of all time. There’s so many different meat options you can make this with but my favorites are usually grilled pork, pork chops, and tofu skin with shrimp stuffing. Broken rice is a humble dish but so delicious! ⏱ Time: ~40 min (2 hr including marinating)

For different servings, multiply ingredients accordingly.

🐷 Pork Chop

  • 1 lb pork chop (bone-in, about 1.5 in thick)
  • 2 tbsp garlic
  • 1 tbsp minced lemongrass
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp Knorr Maggi seasoning
  • ½ tsp black pepper
  • 1 tbsp oil
  • 1 cup chopped green onions
  • 1 tsp salt / MSG

🐟 Fish Sauce (Makes extra — store in fridge)

  • 1.25 cups granulated sugar
  • 1.5 cups boiling water
  • 15 Thai chilis, chopped
  • 2 tbsp garlic
  • ½ cup lime juice
  • ¾ cup fish sauce

🧅 Scallion Oil

  • ½ cup green onions
  • Heated oil
  • Dash of salt

🦐 Tofu Skin with Shrimp (Tàu Hủ Kỳ)

  • ½ cup grated shrimp
  • 2 tsp sugar
  • ½ tsp salt
  • Dash of fish sauce
  • 1 tsp ground pepper
  • 2 cloves garlic, minced
  • Bean curd wrappers

🍚 Other

  • Broken rice
  • Cucumbers
  • Tomatoes
  • Pickled carrots/radish

👩‍🍳 Directions

  1. Flatten the pork chop with the back of a knife and make small cuts along the edges to prevent curling.
  2. Marinate overnight or for at least 1–4 hours.
  3. Cook the broken rice according to package instructions.
  4. Prepare the tofu skin with shrimp:
    • Air fry at 375°F for 5–10 minutes.
    • Flip halfway through cooking for even crispiness.
  5. Make the scallion oil (heat oil, then pour over finely chopped green onions and a pinch of salt).
  6. Air fry the pork chops at 400°F for about 20 minutes or until cooked through, flipping halfway.
  7. Cut cucumbers and tomatoes into serving-size slices.
  8. Plate everything neatly, garnish, and serve with fish sauce!
