🍲 Canh Củ Dền
- ½ lb pork spare ribs
- ½ onion
- 1 knob of ginger
- 2 cups water
- 1.5 cups vegetable stock
- 1 cup beets, chopped
- 1 cup carrots, chopped
- 1 cup potatoes, chopped
- 1 tbsp fish sauce
- ½ tbsp MSG
- ½ tbsp salt
- Pepper to taste
- Green onion (for garnish)
- Cilantro (for garnish)
👩🍳 Directions
- Parboil the pork spare ribs for 5–10 minutes, then drain and rinse under cold water.
- In a clean pot, bring water and vegetable stock to a boil. Add the pork, onion, and ginger, and boil for 5 minutes.
- Skim off any impurities from the surface.
- Add the chopped carrots, potatoes, and beets. Cover and let simmer for 30–40 minutes.
- Remove the onion and ginger. Season the soup with fish sauce, MSG, salt, and pepper. Let cook for another 2 minutes.
- Serve hot and garnish with chopped green onion and cilantro.
