Vietnamese Pork Bone Macaroni Soup (Súp Nui)

For different servings, multiply ingredients accordingly.

🍲 Broth Base

  • 3 cups water
  • 1 cup chicken broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp chicken bouillon powder
  • 1 tbsp fish sauce
  • 1 tsp sugar

🥩 Main Ingredients

  • 1 lb pork ribs
  • 1 cup macaroni
  • 1 potato or daikon, cut into chunks
  • 2 celery stalks, cut into 1” pieces
  • 1 carrot, cut into 1” pieces
  • ½ onion
  • 3 green onions (white part for soup, green part for garnish)

🌿 Garnish

  • Green onion (green part)
  • Cilantro

👩‍🍳 Directions

  1. In a pot, boil water and add pork ribs to parboil for 5 minutes. Remove and rinse the ribs under running water to clean.
  2. In a clean pot, bring 3 cups of water and 1 cup of chicken broth to a boil. Add the cleaned pork ribs.
  3. Add in the potato/daikon, celery, carrot, onion, and the white part of the green onions. Season with salt, pepper, bouillon, fish sauce, and sugar. Let simmer for 20 minutes.
  4. While the soup simmers, cook the macaroni separately according to package instructions. Drain and set aside.
  5. To serve, place macaroni in a bowl, ladle soup and ribs over, then garnish with chopped green onions and cilantro.
