
How to make a Vietnamese Onion Soup, or Phở Onion Soup! Channel your inner Ratatouille, because this recipe turned out better than I thought it would!! The broth of phở makes this soup so much more flavorful. I’m already a big onion soup fan, but this definitely made it better on a whole other level.

🧅 Vietnamese-Inspired French Onion Soup
- 2 large yellow onions, sliced
- 2 tbsp butter
- 4 garlic cloves, minced
- 2.5 cups beef stock
- Pho seasonings
- 1 cinnamon stick
- 3 star anise
- 1 tsp coriander seeds
- 1 bay leaf
- 1 tbsp fish sauce
- 1 tsp Worcestershire sauce
- Baguette slices
- Gruyère cheese (for topping)
- Thai basil (for garnish)
👩🍳 Directions
- In a pot, melt butter over medium heat and sauté sliced onions until deeply caramelized (about 30 minutes), stirring often. Add minced garlic and sauté for another minute.
- In a spice bag or tea strainer, add cinnamon stick, star anise, coriander seeds, and bay leaf. Add this to the pot along with beef stock, fish sauce, and Worcestershire sauce. Simmer uncovered for 30 minutes.
- While the soup simmers, toast baguette slices and preheat the oven to broil.
- Ladle the soup into oven-safe bowls. Top each with a toasted baguette slice and a generous layer of Gruyère cheese.
- Broil for 2–3 minutes, or until the cheese is bubbly and golden brown.
- Garnish with Thai basil and serve hot!
