Healthy Avocado Pudding (High-Fiber, Nondairy, Refined Sugar-Free)

This Healthy Avocado Pudding is a creamy, nutrient-dense dessert made with just 4 simple ingredients and no added sugar or dairy! Lately I’ve been trying to find alternatives to traditional creamy desserts since they tend to make me break out and can contribute to inflammation. 

In Vietnamese cuisine, avocado is often used in desserts because it naturally creates a rich, smooth texture when blended. Here, I combine it with roasted sweet potato to create a thick, decadent pudding that’s packed with over 15 grams of fiber and 10 grams of protein, making it a satisfying and anti-inflammatory way to curb sweet cravings! Leaves you feeling full and happy!

Ingredients
  

  • 1 roasted sweet potato
  • 1 medium avocado
  • 200 mL unsweetened soy milk, adjust amount to your level of creaminess
  • 2 dates

  • Blend all ingredients until smooth and creamy.
