Apple Pie Sticky Rice
This Apple Pie Sticky Rice is a cozy fall twist on the classic Thai dessert mango sticky rice. When mango season ends but apple season begins, this recipe keeps the comfort going by swapping ripe mango for apple pie filling.

Apple Pie Sticky Rice
Ingredients
Rice
- 1 cup glutinous rice
- ½ cup coconut milk
- ½ cup almond milk
- 1 Tbsp brown sugar, adjust to taste based on sweetness preference
- ¼ tsp salt
- 2 cinnamon sticks
Filling
- 2 large honey crisp apples, peeled & cut into ½” pieces
- ½ Tbsp ginger, minced
- ½ Tbsp lemon juice
- ½ tsp cinnamon
- ⅛ tsp nutmeg
- 1 Tbsp brown sugar
- 1 Tbsp maple syrup
- ⅛ tsp salt
- 1 Tbsp water
- ½ Tbsp cornstarch
Sauce
- ½ cup coconut milk
- 2 Tbsp applesauce
- 1 Tbsp maple syrup
- ¼ tsp cinnamon
- ½ tsp vanilla extract
Garnish
- Pecans
Instructions Start Cooking
- Wash the glutinous rice 3-4 times. Soak the rice in 1.5 cups of water for 2 hours.1 cup glutinous rice
- After soaking, drain the water and transfer the rice to a medium-sized pot.
- Place the pot over medium-high heat and add the rice ingredients. Mix everything until well combined with the rice.½ cup coconut milk, ½ cup almond milk, 1 Tbsp brown sugar, ¼ tsp salt, 2 cinnamon sticks

- Reduce the heat to a low simmer, cover, and cook for 20–25 minutes, uncovering every few minutes to stir so the rice does not burn on the bottom.

- Once the rice is cooked, remove the cinnamon sticks and set the rice aside to cool slightly.

- To make the coconut sauce, heat the coconut milk in a small saucepan over medium heat. Add the sauce ingredients and stir over low heat for 2–3 minutes.½ cup coconut milk, 2 Tbsp applesauce, 1 Tbsp maple syrup, ¼ tsp cinnamon, ½ tsp vanilla extract
- Remove the sauce from heat and let it cool for 3–5 minutes.
- To plate, place the sticky rice and apple pie filling side by side on the plate.
- Garnish with pecans and drizzle the coconut sauce over the top before serving.Pecans
