Vietnamese Macaroni Soup with Pork Ribs (Súp Nui)
How to make this Vietnamese Macaroni Soup with Pork Ribs, otherwise known as Súp Nui. It’s made with a light, clear broth from simmering pork ribs vegetables like carrots, potatoes, or daikon. This soup is perfect for when you’re feeling sick or crave something hearty.


Vietnamese Macaroni Soup with Pork Ribs (Súp Nui)
Ingredients
- 1 lb pork ribs
- 2.5 cups water
- 1 cup chicken broth
- 1 potato or daikon, peeled and cut into chunks
- 2 celery stalks, cut into 1” pieces
- 1 carrot, peeled and cut into 1” pieces
- ½ onion
- 3 green onions, whites and greens separated
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp chicken bouillon powder
- 1 Tbsp fish sauce
- 1 tsp sugar
- 1 cup macaroni
Garnish
- Cilantro
- Green onions
Instructions Start Cooking
- Boil water in a large pot and add in pork bones. Parbroil the pork for 5 mins then remove and wash the pork bones under running water.1 lb pork ribs
- Pour out the water from the pot and boil the 2.5 cups water and chicken broth. Add in pork ribs.2.5 cups water, 1 cup chicken broth
- Add in vegetables (potato, celery, carrot, onion, white part of green onion) and seasonings then bring heat down to let it simmer for 20 mins.1 potato or daikon, 2 celery stalks, 1 carrot, ½ onion, 3 green onions, 1 tsp salt, 1 tsp black pepper, 1 tsp chicken bouillon powder, 1 Tbsp fish sauce, 1 tsp sugar
- Prep the macaroni in the meantime.1 cup macaroni
- Add macaroni and pork soup in a bowl then garnish with green onions and cilantro before serving.
