Din Tai Fung Pork Chop Fried Rice
How to make Din Tai Fung Pork Chop Fried Rice, which is one of my favorite dishes to eat at the restaurant! It’s lightly seasoned rice, soft scrambled eggs, and scallions topped with a perfectly lightly fried pork chop.
The pork chops are marinated to stay juicy and flavorful, then lightly fried until golden and crisp on the outside. The fried rice itself is fluffy, with eggs cooked just until soft and folded into the rice for that signature texture Din Tai Fung is known for. A drizzle of shallot oil or chili oil at the end is a must!


Din Tai Fung Pork Chop Fried Rice
Ingredients
Pork chops
- 1 lb pork chops, boneless
- 2 Tbsp corn starch
- 2 tsp five spice powder
- ½ Tbsp soy sauce
- 2 tsp sugar
- ½ Tbsp Chinese cooking wine
- 1 tsp pepper
Rice
- 1.5 cups white rice, day old
- ½ cup green onions, whites and greens separated
- 3 large eggs
- 1 tsp salt
- 1 tsp sugar
- 1 tsp white pepper
- 1 tsp chicken bouillon powder
- 1 Tbsp oil
Garnish
- Chili oil
Instructions Start Cooking
- Cut shallow slits and poke holes all over the pork chops to help them absorb the marinade. Marinate overnight in the refrigerator.1 lb pork chops, 2 Tbsp corn starch, 2 tsp five spice powder, ½ Tbsp soy sauce, 2 tsp sugar, ½ Tbsp Chinese cooking wine, 1 tsp pepper
- Heat oil in a large wok or skillet over high heat. Add the scallion whites and fry for about 30 seconds, until fragrant.½ cup green onions
- Reduce heat to medium and add the eggs. Scramble gently for about 1 minute, cooking the eggs until mostly set but still slightly soft.3 large eggs
- Add the rice and increase heat to high. Cook for a few minutes, stirring and breaking up the rice so it’s evenly mixed with the eggs and scallions.1.5 cups white rice
- Add the seasonings and continue cooking for a few more minutes, stirring constantly. Stir in the green parts of the scallions and cook for 1 more minute. Transfer the fried rice to a plate and set aside.1 tsp salt, 1 tsp sugar, 1 tsp white pepper, 1 tsp chicken bouillon powder, 1 Tbsp oil
- Heat oil in a separate pan over medium heat.
- Add the pork chops and fry for 4–5 minutes per side, until golden brown and cooked through. To check doneness, cut into one pork chop to ensure there’s no pink inside. Alternatively, air fry at 375°F for about 15 minutes, flipping halfway through.
- Serve the pork chops over the fried rice. Drizzle with chili oil, if desired, for extra flavor.Chili oil
