Yuzu Miso Salmon Ochazuke

Yuzu Miso Salmon Ochazuke is a comforting Japanese rice bowl that combines salmon, warm tea or dashi broth, and rice into one soothing dish. The salmon is marinated in a yuzu miso sauce, then air-fried until tender and flavorful before being placed over rice and finished with hot tea or broth.

Salmon is naturally rich in omega-3 fatty acids. Omega-3s are known for supporting heart health, brain function, and helping regulate inflammation, making this bowl as nourishing as it is satisfying.

The salmon can easily be cooked in the air fryer, and the warm broth softens the rice, making it easy to digest too!

Yuzu Miso Salmon Ochazuke

Ingredients
  

  • 8 oz skin-on salmon fillet, cut in half
  • 2 Tbsp miso paste
  • 2 tsp yuzu kosho
  • 1 tsp sesame oil
  • 1 Tbsp soy sauce
  • 1 Tbsp mirin
  • 1 Tbsp cooking sake
  • 1 cup dashi stock or tea, genmaicha or any roasted tea
  • 1 cup purple rice
  • Furikake

Instructions
 Start Cooking 

  • In a small bowl, combine the marinade ingredients and coat the salmon evenly. Cover and marinate for at least 1 hr in the refrigerator.
    8 oz skin-on salmon fillet, 2 Tbsp miso paste, 2 tsp yuzu kosho, 1 tsp sesame oil, 1 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp cooking sake
  • Preheat the air fryer to 385°F.
  • Place the marinated salmon in the air fryer basket and cook for 12–16 minutes, or until the salmon is cooked through and lightly caramelized.
  • While the salmon cooks, prepare roasted green tea, genmaicha, or dashi stock and keep it warm.
    1 cup dashi stock or tea
  • Once the salmon is done, allow it to rest for a few minutes before plating.
  • To assemble the bowl, place steamed rice at the bottom and sprinkle a layer of furikake over the rice.
    1 cup purple rice
  • Add the salmon on top of the rice.
  • Pour the hot tea or broth over the salmon and rice.
  • Finish with an additional sprinkle of furikake and serve immediately.
