Cherry Matcha Upside Down Cake

This Cherry Matcha Upside Down Cake combines sweet-tart cherries with matcha for a colorful, antioxidant-rich dessert. Cherries are rich in polyphenols like anthocyanins, which have been studied for reducing oxidative stress and inflammation.ย 

Interestingly, tart cherry juice has also been shown to increase melatonin and improve sleep duration & quality in healthy adults! While the sample size was small, itโ€™s cool seeing how it can have a measurable effect on our body.

I think I have to work on making this cake look prettier, but the flavor was just right!

This Cherry Matcha Upside Down Cake combines cherries with matcha for a colorful, not-too-sweet dessert. Itโ€™s refined sugar-free and rich in antioxidants.

Ingredients
  

  • 1 tsp coconut oil
  • 1.5 cups pitted cherries
  • 1 ripe banana
  • 2 eggs
  • ยฝ cup greek yogurt
  • 3.5 oz unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 Tbsp honey
  • 2 cups almond flour
  • 2 Tbsp culinary grade matcha
  • ยฝ tsp baking powder
  • ยฝ tsp baking soda
  • ยผ tsp salt

Instructions
 Start Cooking 

  • Preheat the oven to 350ยฐF.
  • Grease the bottom of a 7โ€-diameter cake pan with coconut oil. Arrange the cherries in an even layer across the bottom of the pan.
    1 tsp coconut oil, 1.5 cups pitted cherries
  • In a large mixing bowl, combine all the wet ingredients.
    1 ripe banana, 2 eggs, ยฝ cup greek yogurt, 3.5 oz unsweetened applesauce, 1 tsp vanilla extract, 1 Tbsp honey
  • In a medium mixing bowl, whisk together all the dry ingredients.
    2 cups almond flour, 2 Tbsp culinary grade matcha, ยฝ tsp baking powder, ยฝ tsp baking soda, ยผ tsp salt
  • Add the dry ingredients into the wet ingredients and mix until a smooth batter forms.
  • Carefully pour the batter over the cherries and spread evenly to fully cover the fruit.
  • Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow the cake to cool completely in the pan.
  • Once cooled, carefully invert the cake onto a serving plate and remove the pan.
  • Slice and serve.
