Creamy Tomato Soup (without the cream!)
This Creamy Tomato Soup gets its rich texture without using any heavy cream. Instead, cauliflower and tofu blend into the roasted tomatoes, carrots, and bell peppers to create that creamy consistency.ย

Tofu also provides soy protein and healthy unsaturated fats, while using chicken bone broth instead of water adds even more protein and savory flavor. Roasting the vegetables concentrates their natural sweetness, and cooking tomatoes also makes their antioxidant lycopene more bioavailable, giving you a soup thatโs creamy, nourishing, and packed with nutrients.
