Egg White Nut Mix

This Egg White Nut Mix is one of the easiest ways to make perfectly crunchy, flavorful roasted nuts at home. The secret isn’t more oil. It’s actually egg whites! Because egg whites are almost entirely protein and contain virtually no fat, they create a light coating that transforms as it bakes. The proteins denature and coagulate in the oven, forming a thin, crispy shell around each nut while helping the seasonings stick evenly to the surface.

Beyond texture, nuts are naturally rich in healthy unsaturated fats, fiber, minerals, and plant compounds that support heart health and satiety.ย It’s important to use a mix, not chasing one “healthiest” nut. Each nut in the mix brings something different to the bowl: walnuts are the richest common nut source of plant-based omega-3 (ALA, about 2.5 g per oz), almonds carry the most vitamin E of any tree nut (around 7 mg per oz) plus fiber, and pistachios add the eye-supportive carotenoids lutein and zeaxanthin while staying among the lower-calorie tree nuts.

In a large pooled analysis, eating about a handful of nuts a day was associated with lower rates of heart disease and dying from any cause, with the benefit leveling off around 20 g a day. And even though nuts are calorie-dense, controlled trials show that adding a daily serving doesn’t lead to weight gain, either.

Ingredients
  

  • 1 egg white
  • ยฝ tsp smoked paprika
  • ยฝ tsp chili powder
  • ยฝ tsp curry powder
  • ยฝ tsp garlic powder
  • ยฝ tsp salt
  • ยผ tsp chinese five spice powder
  • โ…› tsp turmeric
  • ยผ tsp black pepper
  • ยฝ cup peanuts
  • โ…“ cup almonds/walnuts
  • โ…“ cup cashews
  • โ…“ cup pistachios

Instructions
 Start Cooking 

  • Preheat the oven to 300ยฐF.
  • In a large mixing bowl, whisk the egg whites until frothy.
    1 egg white
  • In a separate bowl, combine all the seasonings and mix well.

  • Add the seasonings and nuts to the egg whites, then mix thoroughly until the nuts are evenly coated.
    ยฝ cup peanuts, โ…“ cup almonds/walnuts, โ…“ cup cashews, โ…“ cup pistachios
  • Spread the nut mixture in a single layer on a parchment-lined baking sheet.
  • Bake for 45 minutes, stirring every 15 minutes to ensure even roasting.
  • Remove from the oven once the nuts are golden brown and crisp.
  • Allow the nuts to cool before serving or storing in an airtight container.

    1. Hi! Thanks for asking ๐Ÿ™‚ I’ve heard people use aquafaba (liquid from can of chickpeas) as egg white substitute. You can whip it up as well. I haven’t personally used it but hopefully that substitute could work!
