Air Fryer Elote Eggs
These Air Fryer Elote Eggs are a fun, high-protein snack inspired by flavors of Mexican elote and Vietnamese street corn. Hard-boiled eggs are marinated, air-fried, and coated in chili spices before being finished with lime, scallion oil, and Parmesan.
I love serving these eggs on skewers, which reminds me of walking around the fair and eating fun street snacks. They’re simple to make, packed with protein, and full of street-food flavor.



Air Fryer Elote Eggs
Ingredients
- 9 eggs, hard-boiled
- 1 Tbsp oyster sauce
- ½ Tbsp fish sauce
- 1 Tbsp soy sauce
- ½ Tbsp sugar
- ½ Tbsp lime juice
- 50 mL water
- 1 Tbsp chili powder
- 1 Tbsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- 1 tsp oregano
Garnish
- Cilantro
- Lime
- Parmesan
- Scallion oil
Instructions Start Cooking
- Fill a large pot with water and bring it to a boil over high heat. Carefully add the eggs and cook for 11–12 minutes until fully hard boiled.9 eggs
- Transfer the eggs to a bowl of cold water or an ice bath and allow them to cool slightly. Peel the shells once cool enough to handle.
- Using a knife, cut vertical slits along the egg whites, being careful not to cut too deep into the yolks. This helps the marinade and spices absorb better and prevents them from exploding in the air fryer.
- In a large mixing bowl, whisk together the oyster sauce, fish sauce, soy sauce, sugar, lime juice, and water until well combined.1 Tbsp oyster sauce, ½ Tbsp fish sauce, 1 Tbsp soy sauce, ½ Tbsp sugar, ½ Tbsp lime juice, 50 mL water
- Add the eggs to the marinade and gently toss to coat. Let the eggs marinate for about 10 minutes, turning occasionally so the seasoning distributes evenly.
- Preheat the air fryer to 300°F (150°C). Place the marinated eggs in the air fryer basket in a single layer and cook for 7 minutes.
- Sprinkle the eggs with chili powder, paprika, cumin, garlic powder, onion powder, salt, and oregano. Toss gently so the spices coat evenly. (Alternatively, remove the eggs to a bowl, mix with the spices, then return them to the air fryer.) Cook for another 7 minutes1 Tbsp chili powder, 1 Tbsp paprika, 1 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, 1 tsp oregano

- Once finished, remove the eggs and allow them to cool slightly before putting them on skewers (if desired).
- Garnish with scallion oil, grated Parmesan, and a squeeze of fresh lime before serving.Cilantro, Lime, Scallion oil, Parmesan
