Shaved Mango Yogurt Bowl

This is one of those recipes where the technique is half the fun. The shaved fruit “snow” on top is just frozen fruit! It actually works because fresh fruit is naturally 80–90% water. When you freeze mango and strawberries solid overnight, that water content turns into fine, delicate ice crystals. Grate or peel them over the bowl, and you get this light, airy snow that melts on contact just like fruit snow.

I made a base of coconut chia pudding layered with fresh mango and a dollop of coconut yogurt. Perfect for a warm weather breakfast, snack, or an impressive-looking dessert that takes almost no effort or expensive machines!


Shaved Mango Yogurt Bowl

This shaved mango yogurt bowl is a refreshing, dairy-free bowl layered with coconut chia pudding, fresh mango, coconut yogurt, and frozen shaved mango and strawberry “snow”. It's naturally sweet, full of antioxidants, and works as a gut-friendly breakfast or dessert.

Ingredients
  

Coconut chia pudding

  • 2 Tbsp chia seeds
  • ¼ cup coconut yogurt
  • ¼ cup soy milk
  • ¼ tsp purple sweet potato powder or ¼ tsp ube extract

Bowl ingredients

  • 1 mango, frozen
  • 4 strawberries, frozen
  • 1 mango, cut into pieces
  • cup coconut yogurt
  • Coconut flakes, for garnish
  • Sliced almonds, for garnish

Coconut drizzle (optional)

  • ¼ cup coconut milk
  • 1 Tbsp honey

Instructions
 Start Cooking 

  • Prepare the coconut chia pudding and refrigerate overnight to set.
    2 Tbsp chia seeds, ¼ cup coconut yogurt, ¼ cup soy milk, ¼ tsp purple sweet potato powder or ¼ tsp ube extract
  • Peel the mango. Freeze the mango and the strawberries in a freezer-safe bag overnight.
    1 mango, 4 strawberries
  • To assemble, scoop the coconut chia pudding into serving bowls as your base.
  • Add fresh mango pieces and a dollop of coconut yogurt to the bowl.
    1 mango, ⅓ cup coconut yogurt
  • Using a grater or peeler, quickly shave the frozen mango and strawberries over the bowl.
  • Top with coconut flakes and sliced almonds.

  • Optionally drizzle with a coconut sauce, then serve immediately.
    ¼ cup coconut milk, 1 Tbsp honey

Notes

The shaved snow melts fast! Have your bowls prepped and ready to go before you start grating.
