One-Pot Steamed Salmon Tomato Rice
This One-Pot Steamed Tomato Salmon Rice completely changed the way I cook fish! Even though I love sushi, I’ve never been a fan of the smell or taste of cooked fish. Here I combined 3 simple cooking techniques into one pot to make salmon something I actually look forward to eating.ย

- Instead of cooking the rice in plain water, it’s simmered with fresh tomatoes, which infuse the rice with flavor, while making lycopene (the primary antioxidant in tomatoes) more bioavailable.
- The natural acidity of tomatoes helps reduce the fishy-smelling compounds in salmon by altering them at the chemical level, creating a cleaner, milder flavor without needing to rely on heavy seasonings.ย
- Finally, gently steaming the salmon over the rice helps preserve nutrients while minimizing the formation of potentially harmful compounds that can develop with high-heat cooking methods.

The result is fluffy, flavorful rice, clean-tasting salmon, minimal cleanup, and an easy one-pot meal that’s nourishing and nutritious!
